John of God is the patron saint of book sellers, fire fighters (not fire works) as well as a few other things.
The event I believe they are celebrating is John's daring rescue of hospital patients during a fire. It's reported that he ran through the fire to save a great many people.
So these people celebrate and commemorate John's daring rescue by running through the (fire....works) just as John did.
