Who here home brews?

I'm sure there are some experts here at home brewing, so I'm wondering where a good place to start would be. I've been looking at some of the brewing kits, and the kits where you just open a machine, dump some packets in, and turn it on seem to take the whole fun out of brewing at home. I don't want to make a name brand beer at home, I want to experiment and make my own creations.

Do you guys use any specific fancy equipment, or just a couple buckets?

I'm thinking about something like this:

I'm about to start. The kids combined their resources and combined my B-day and Xmas giifts (usually frowned upon) to buy me a home brewing kit. I'm going to do some reading from books that Babalu recommended (those were the wife's gifts to me) and see how it goes.

Northern Brewer is a great online resource

An all inclusive kit is the way to go.
Read, read, read and then read some more.

I would recommend two books before you even start to boil water:

Charlie is the Godfather of Homebrewing

Bottom line on brewing, if you like to cook you will like to brew
.... and cleanliness is next to Godliness

Also, I would recommend a beer that is ready FAST for your first beer.
A standard Bitter or a Brown ale
You dont need to be waiting for three months on your first brew, those two should be ready in about a month.
Wheat beers are ready pretty quick too, I'm drinking a Dunkelweizen thats only a month old

I'll probably give it a try next weekend. The kit included ingredients for Ponderosa Porter. It came with a 5 gallon kettle, two 5 gallon buckets, 48 bottles/caps/capper, hydrometer and siphoning equipment. Of course, I'm more than a bit nervous about trying the first batch. The brewing process seems straight forward. The siphoning process seems much more involved. But I guess I've got to try it and just get some experience.

EXCEPT:

DONT PITCH THE YEAST AT 75, it makes fusels (headache) and causes funky flavors. With Winter weather you can just put the fermenter outside after its cooled to around 80 and let the weather do the rest.

I dont know why people continue to approve of this (warm pitching of yeast)
For an ale, pitch the yeast in the low to mid 60's and let it warm up to room temp.

Other than that its a very good tutorial.

Siphoning isnt all that tough, get a turkey baster and put that on the end of the racking assembly then suck start it.
Key is to keep it pinched AND keep both ends at the same level.
Practice it a bunch and it will become second nature


Thanks Mikie, did the Dunkelweizen have a decent head? I didnt get a good fill on that bottle

Microbrews are huge around here. McMenamin's makes some fine beers, and of course, Widmer is here, too. In only three months, Widmer Hefeweizen has become my default beer.

This is gonna be fun. I'll follow your advice and we'll start with a brown, and it'll be ready for the Super Bowl!

Bid, one more thing other than what the meister has said. NFG homebrew is in Leominster (Downtown on summer st. across from the brick church on main). He sells EVERYTHING! Fran is a great guy, good brewer, has samples on tap, and most importantly....HE SELLS LIQUID YEAST! Yeast makes all the difference. He has screwy hours too, so check out his website. Like the meister said, cleanliness is next to godliness. So use sanitizer on everything that touches the beer that isn't going to be at boiling temperature.

One just opened in Pittsfield!

I've just about drained my two kegs of holiday brew. My amber is gone and the blonde is about 2/3 done. So I will be heading there this week for my next batches.

Now I see where they got the kit ;)

LIGHT syrup is the way to fly for extract kits, then specialty grains to bring the color/flavors into balance with the style.

Nottingham is a good yeast, keep it cool if you can (what temp is your cellar Bid?)
That yeast (Nottingham) will ferment into the 50's with excellent results.

Just watched the entire series including the siphoning and bottling. Kewl that he's using the exact equipment I got.

I think my basement stays around 60 or so during the winter. I'll verify that.

Fran is a great guy, good brewer, has samples on tap, and most importantly....HE SELLS LIQUID YEAST! Yeast makes all the difference. He has screwy hours too, so check out his website. Like the meister said, cleanliness is next to godliness. So use sanitizer on everything that touches the beer that isn't going to be at boiling temperature.
I don't make it to Leominster too often. When it's time to go beyond the starter kit, I'll poke around and find some potential supply places.
